What's for Dinner?

The nosey part of me has always wondered what other moms are doing for dinner? Dinnertime can be stressful for a working mom... and by working, I mean ALL OF US, whether we are working at home or working outside the home. Therefore, one of my favorite blog-stalking activities has been checking out posts about what other moms are making for dinner. So, I thought I'd post my first "What's for Dinner" entry. Last night, we had an Chicken Enchilada Casserole, which was a crowd-pleaser, cheap, and easy (my three main criteria for a successful meal!)

Here's how I threw it together.

Chicken Enchilada Casserole

2 large boneless, skinless chicken breasts
1 can of cream of chicken soup
1/2 cup salsa
1 1/2 cup sour cream
1 cup crushed Doritos
Flour tortillas cut into small strips
2 cups shredded cheddar

Boil chicken and cut into small pieces. Mix chicken pieces together with soup,sour cream, and salsa.
Layer chicken mixture, tortillas, and cheese like lasagna. Continue until you run out of ingredients. Spread crushed Doritos on top. Cover with foil and bake 30 minutes or until bubbly at 350.

  1. Yum! I'll have to try this one. We had King Ranch chicken tonight-basically the same thing except with a can of mushroom soup instead of the sour cream and you crush up tortilla chips on top! I love the menu Mondays on blogs!!

    I make the following few things often. Inexpensive, easy and they provide leftovers....

    ***stir fry (veggie is fine with me, but the husband doesn't seem to think meals count if they don't contain meat....so I add chicken or skirt steak when he's here)

    ***carrot and rice soup (one of my all time favorites and SO cheap)

    ***make your own pizza - canned biscuits (generic), spaghetti sauce (Hunt's), shredded mozarella (generic), pepperoni or sometimes even hot dogs: follow biscuit directions to cook after assembling with kids..be sure to flatten the biscuits....all ages love it!

    ***chicken and potatoes (Pioneer Woman's chicken legs - let me know if you want the link) and boxed scalloped potatoes....this chicken cooking method is so easy and flavorful and can be used for pork, too

    ***pick up pizza (almost never use delivery)....large is $7.59 and feeds everyone!

    Can you tell how frugal I am now? :)
